What is whey?
by Cookthink
Whey is the watery leftover liquid that is produced after milk has been curdled and strained to make cheese. Liquid whey contains fat, lactose, vitamins and minerals. It can be broken down and used to make butter, ricotta (on toast, right) and other cheeses. The protein content of whey is separated and sold as a nutritional supplement for bodybuilders. And whey is also used as an additive in making processed crackers, breads and pastries (as well as animal feed). Recipe: Crostini With Lentils, Ricotta And Basil
