This recipe has a few surprises. My requirements for dinner included using an eggplant, a red pepper, a stalk of broccoli, and some leftover tofu. This turned out to be really fun and easy, despite the copious amounts of dishes it seemed to leave me with. I’m sure I could have made it in a more organized fashion had I not been making it up as I went along.

This is a hearty vegetarian egg bake that combines a basic Italian-inspired tomato sauce with more typically Asian combination of tofu and cabbage. The resulting dish is complex, interesting and fulfilling. If you don't have an oven-safe skillet, just pour the tofu, cabbage and sauce into a baking dish before cracking in the eggs.
To make the sauce, I started by whipping up some homemade mayo. Adding the honey and condensed milk right into the food processor made the rest of the sauce a no brainer.

This is a simple, spicy braised tofu and cabbage dish flavored with curry and coconut milk. The tomato puree adds a balancing acidity and lightness. For even more bright flavor, stir in a teaspoon of lime juice and chopped cilantro or basil at the end.
