What is eau de vie?
Eau de vie is French for "water of life" (otherwise known by its Latin name aqua vitae). The life-giving water the name refers to is the alcoholic variety, in particular a group of colorless, unsweetened spirits distilled from fruits or herbs. Some notable types are Kirsch, which is made from cherries; framboise, which begins life as raspberries; and Poire William, which is made from a pear called the Williams' Bon Chrétien (known as the Bartlett pear in the U.S.). Eaux-de-vie-de-vin, or marcs as they are called in French (grappa in Italian), are distilled from the skins and pips leftover from grapes that have been pressed to make wine. |
