Precooking Lasagna Noodles

A few years ago when the no cook lasagna noodles were developed, it seemed like a wonderful idea. We would no longer have to figure out precooking lasagna noodles, how to work with sticky noodles and peel them apart while trying hard not to break them to layer our lasagna dish. And the no cook noodles do work well for lasagnas that are really saucy, such as a tomato-based lasagna that has heaping amounts of sauce to cover the tops of the noodles during the baking process. They need a lot of moisture to soften them.

However, for lasagnas that are drier, precooking the noodles is still the best option.  With the right tools, cooking the noodles can have a good outcome.

Here’s our recommendation to simplify precooking lasagna noodles:

1. Bring a pot of water to a boil.

2. Add the noodles to the pot. Using a pair of tongs, keep them from sticking together as they simmer.

3. Spread out a couple of clean kitchen towels.

4. Pull the noodles out of the boiling water while they are still firm and not quite pliable.

5. Lay them out on the towel in a single layer. Place more towels on the layer if needed.

6. Let the noodles cool and dry a bit before using them to assemble the lasagna.
