What are fines herbes?

Fines herbes is a French term that refers to a mix of chopped fresh chives, tarragon, parsley and chervil.
More delicate than the woodsier herbes de provence, the fines herbes blend is most often associated with the classic omelette aux fines herbes. (Each of the herbs goes so well with eggs, so it's no surprise that they all go well together.)
Fines herbes can also be added to everything from sauces to vegetables, mixed salads, meat dishes, egg salad and soft, fresh cheese (particularly goat cheese).
Despite the name, fines herbes are often coarsely chopped so that they retain their individual identities and provide good color and texture to a dish.
