How to prep enoki mushrooms

Enokis are a beautiful, underused variety of mushrooms. They have an unusually mild, fruity flavor that goes well in stir-frys, soups, stews and burritos and quesadillas. They're easy to prepare. First brush off any loose dirt or particles with a paper towel of mushroom brush.
Then just cut off and discard the roots. The long then stems should be mostly separate from each other.
