What's the point of greasing a cookie sheet (and when should you not)?

Cookie sheets have been greased throughout the ages to prevent cookies from sticking. But with invention of non-stick pans, cooking sprays, silicone baking liners and parchment paper, you usually don't need to add any extra butter to your cookie batter, which usually has plenty of butter or other fat as it is.

As a general rule, don't grease your cookie sheet unless a recipe specifically calls for it (keeping in mind that your granny's recipes may need to be adapted). Greasing a cookie sheet will cause cookies to spread more than they would without the extra grease, which is usually undesirable unless you are baking something like a delicate lace cookie, which is meant to spread out and can benefit from a lightly greased pan.

If you do grease, make sure not to overdo it - your cookie bottoms may burn from all that extra sizzling butter.
