What is smearcase?
Smearcase is a word brought to us by the Pennsylvania Dutch via the Germans that simply means spreadable cottage cheese. Smearcase is also the name of a cheesecake-like dessert popular in Baltimore that is sometimes referred to as "German," but is probably an Americanization of a Germanic dessert that was popularized by German immigrants in the city.
