Honey Cake

This is a traditional treat for Rosh Hashanah, the Jewish New Year. But it's also a not-too-sweet treat that's good anytime. The coffee and brown sugar give it a darkness that balances the golden sweetness of the honey.
ingredients
3 eggs
1 1/3 cups honey
1 1/2 cups dark brown sugar
1 cup strong black brewed coffee
2 teaspoons baking powder
3 tablespoons unsalted butter
1 teaspoon baking soda
4 cups flour
2 teaspoons cinnamon

instructions
1. Preheat the oven to 325F. Grease and flour a large loaf pan.
2. In a large mixing bowl, beat the eggs with a whisk or immersion mixer, then add the honey and beat together. Add sugar and combine thoroughly.
3. In a smaller bowl, mix the coffee with the baking powder and whisk until combined. Add softened butter, and mix until combined.
4. Add coffee mixture to egg mixture. Add baking soda, flour, and cinnamon and mix well.
5. Pour into the prepared pan and bake 50-60 minutes, until a toothpick comes out clean.
