Sambal-Roasted Sweet Potatoes
serves 2-4
Recipe from cookthink
A shot of sambal oelek, with all its fiery chili flavor, transforms regular old sweet potatoes into a bright, flavorful side dish.
ingredients
2 medium sweet potatoes, cut into 2-inch chunks
2 teaspoons sambal oelek
1/4 bunch cilantro
timer
prep: 15 minutes
total: 1 hour
tools
scrub brush
medium bowl
roasting pan
instructions
1. Preheat the oven to 425F. Scrub the sweet potatoes well under running water to remove any dirt from their skins. Dry them and cut them into 2-inch pieces. (You can peel them first if you want to, but it's not necessary.)
2. In a medium bowl, toss the sweet potatoes with the sambal oelek until they're evenly coated. Pour them out onto a roasting pan. Roast them until they're tender, 45-60 minutes. Garnish with cilantro leaves.

I tried to use yams in this recipe instead of sweet potatoes. Whoops. This was wildly spicier than expected, mostly likely due to the lack of sweetness with the yams.
