Ham, Pear And Gruyere Sandwich

Somehow, pressing a sandwich makes it better, especially when there's cheese involved. All three main elements of this sandwich could be exchanged for something else. Camembert, apple and turkey, for example, sounds just as good to us.

2 pitas
4 slices ham
4 slices gruyère
1/2 Bartlett pear, cored and thinly sliced
1 tablespoon unsalted butter

instructions
1. Preheat the oven to 200F. Slice the pitas open on one end by making a horizontal cut along the fold. Fill each pita pocket with the ham, cheese, gruyère and pear slices.
2. Melt half the butter over medium heat in a nonstick skillet. When the butter is hot, add one of the sandwiches to the pan. Put a cast iron pan on top of the pita to press it down. Cook until the bread is toasted and the cheese is melted, 3-5 minutes per side.
3. Put the first sandwich in the oven to keep it warm while you cook the second sandwich with the remaining half tablespoon of butter.
