Roasted Pears With Caramel, Creme Fraiche And Pistachios

This is a perfect spur-of-the-moment dessert for the fall and winter. Try it with any type of pear or with apples, or with a mixture of the two.

2 tablespoons unsalted butter
1/2 cup packed dark brown sugar
2 Bartlett pears, halved and cored
1/4 cup crème fraîche
3 tablespoons chopped pistachios

instructions
1. Preheat oven to 400F. Put the butter in a square baking dish. Put the dish into the oven to melt the butter.
2. Once the butter has melted, sprinkle the sugar over it and stir to combine. Place the pear halves, cut side down, in the sugar and butter mixture. Roast the pears until they're almost tender, 20-30 minutes.
3. Turn the pears over and roast 5 more minutes with the cut side up.
4. Reserving the pan sauce, place the pears in individual bowls and top with a spoonful of crème fraîche. Sprinkle with the chopped pistachios, and drizzle with the remaining pan sauce before serving.
