Soybeans With Yogurt And Basil

ingredients
2 tablespoons olive oil
1 small yellow onion, minced
1 clove garlic, minced
4 plum tomatoes, seeded and chopped
1 pound frozen soybeans, thawed and drained
1/4 cup packed basil leaves, thinly sliced
1/2 cup Greek yogurt
4 lemon wedges

instructions
1. In large sauté pan, heat the olive oil over medium-high heat. When it's hot and shimmering, stir in the onion and cook until it softens, 4-6 minutes. Stir in the garlic and cook until it becomes fragrant, 30 seconds or so.
2. Add the tomatoes and cook, stirring often, until they begin to break down, 5-7 minutes. Stir in the soybeans to combine with everything. Reduce the heat to medium-low and simmer until the beans are tender, 10-12 minutes.
3. Meanwhile, in a small bowl, stir together the basil and Greek yogurt. When the beans are done, take them off the heat and stir in the yogurt until it's warmed through. Serve with the lemon wedges.
