Simple Guacamole Salad

Cubing the avocado makes this guacamole more like a side salad than a dip. We love to serve it alongside grilled meats or to top Mexican and Tex-Mex soups and stews. You might also serve it over a green salad or taco salad.
ingredients
1 avocado, cubed
1 green onion, white and tender green parts, thinly sliced
1/8 teaspoon kosher salt
2 teaspoons olive oil
1 lime, juiced
1 tablespoon chopped fresh cilantro
1/4 teaspoon red pepper flakes

instructions
Prep the avocado. When you have the seed removed and the skin still on, carve the avocado flesh into cubes. Insert a large spoon between the skin and flesh to remove the cubes into a bowl. Gently mix the remaining ingredients with the avocado, seasoning with salt and pepper to taste.
