Spicy Moroccan Carrot Salad

ingredients

4 medium carrots, coarsely grated
1/4 cup dried currants
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/4 teaspoon red pepper flakes
1/2 teaspoon kosher salt
1/8 teaspoon grated ginger
2 tablespoons chopped fresh cilantro

instructions

Grate the carrots. Toss them with everything except the cilantro. Stirring occasionally, let the salad marinate at room temperature for up to 2 hours. Stir in the cilantro before serving.
