Roasted Beet And Goat Cheese Salad

Roasting brings out all the natural sweetness of beets - and the goat cheese adds a touch of creaminess.  You can use either plain, or herbed goat cheese - either would be be delicious.

ingredients

1 pound large beets, stemmed
1 tablespoon good-quality white wine vinegar
5 ounces goat cheese, crumbled
1 tablespoon olive oil

instructions

1. Preheat the oven to 400F. Cut off and discard the beets' stems. Put the beets directly on the oven rack and roast until you can easily insert a sharp knife into the center, 45-60 minutes.

2. Once the beets have cooled just a little, peel them using a paper towel. Cut them in half or into quarters, and toss them in a bowl with vinegar and a sprinkling of salt and pepper. Let them sit for up to 30 minutes to absorb the vinegar, then toss with the crumbled goat cheese and olive oil. Taste the salad and add more salt, pepper or goat cheese to taste.
