ingredients

2 boneless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
salt and pepper
1/8 teaspoon red pepper flakes

timer

prep: 20 minutes
total: 30 minutes

tools

wooden skewers
large bowl
baking sheet
digital instant-read meat thermometer

instructions

1. Soak 6 wooden skewers in water for 20 minutes.

2. Preheat the broiler to high and place the oven rack 6-8 inches below it. Put the cubes of chicken in a bowl and toss them with the olive oil. Season them generously with salt, pepper and the red pepper flakes.

3. Put 4-6 cubes of chicken on each skewer. Put the kebabs on a baking sheet and slide it under the broiler. Leave the chicken alone to brown for 4-6 minutes then turn to brown a few minutes on each side. Cook until the chicken reaches 160F in the center or feels firm but not hard to the touch.
