Broiled Filet Mignon

2 2-inch-thick filet mignon steaks
salt and pepper

Warning: your kitchen will get very hot and a little smoky while you're doing this. Turn on a fan or open some windows as you preheat.

1. Preheat the broiler to high and put the oven rack in the middle position. Put a cast-iron skillet in the oven to preheat for 10 minutes. Season the filets generously on both sides with salt and pepper.

2. Using an oven mitt (or two), remove the hot skillet and put the steaks in it with some space between them. Slide the skillet back underneath the broiler. Broil until the steaks reach 135F for medium-rare, roughly 7-10 minutes for 2-inch-thick steaks. (You'll have to experiment with your broiler to figure out how long you need to cook your steak to get it how you want it.)

3. Remove the steaks to a plate and let them rest for 5 minutes before serving.

This worked exactly as it says here. I even measured my steak's thickness. It was a perfect tender steak.
