Salmon Cakes

ingredients

1 egg, beaten
3 green onions, white and tender green parts, thinly sliced
1 clove garlic, minced
2 tablespoons chopped fresh parsley
2 15-ounce cans wild Alaskan sockeye salmon
1 teaspoon Old Bay seasoning
1/2 cup panko bread crumbs
3 tablespoons vegetable oil
1 lemon, quartered

instructions

1. In a large bowl, beat the egg and then mix in the green onion, garlic, parsley, beaten egg, salmon and Old Bay seasoning. Add the breadcrumbs slowly until mixture is just stiff enough to handle. (You probably won't need the full 1/2 cup.)

2. Form the salmon into patties that are 1/2-inch thick. Dredge the cakes in any remaining breadcrumbs and then season them on both sides with salt and pepper.

3. In a large skillet, heat the vegetable oil over medium heat. When it's hot and shimmering, add the cakes. Leave them alone to brown well on the first side, 4-6 minutes. Turn and brown the other side. Sprinkle with more parsley and serve with quarters of lemons.
