Though you can get frozen peas year round, the fresh ones are worth the wait - they truly taste like spring. And, yes, the softer flavor of shallots is better for this dish than onion.

2 cups fresh green peas, shelled
1 shallot, thinly sliced
2 tablespoons olive oil
1/4 cup water
1/4 teaspoon red pepper flakes
2 teaspoons chopped fresh mint

1. Prep the peas and the shallot. Heat the oil in a medium saucepan over medium-high heat. When it's hot and shimmering, add the shallots and season with a light sprinkling of salt and pepper. Cook, stirring once or twice, until they turn soft and begin to brown around the edges, 3-5 minutes.
2. Stir in the peas. Let them brown with the shallots for 2-4 minutes. Pour in the water and stir. Cook until the water is almost gone, 3-5 minutes, then stir in the red pepper flakes and mint.
