Jicama And Orange Salad

This is a perfectly sweet, crisp and crunchy side - the jicama pairs so well with the orange, and the cilantro and citrus juice brings all the tart flavors together. Try it with a spicy or heavy main dish - like our Chicken Burritos With Black Beans, Spinach And Cilantro.
ingredients
3/4 pound jicama, peeled and cut into matchsticks
3 seedless oranges, peeled and sectioned
1/2 red onion, thinly sliced
1/2 cup chopped fresh cilantro
2 teaspoons olive oil
2 tablespoons fresh lemon juice
3 tablespoons fresh orange juice
1/4 teaspoon kosher salt

instructions
1. Prep the jicama by cutting it into large chunks and peeling each chunk with a paring knife (or peeler). Then slice each chunk into matchsticks. Peel and section the oranges, then chop each section into thirds.
2. Toss the jicama, onion, orange and cilantro together in a large bowl. Drizzle in the oil, lemon juice and orange juice, tasting as you, until you find the right balance. Sprinkle lightly with salt to taste.
