Fava Beans With Yogurt And Basil

Use this fragrant mixture of beans, tomatoes, and yogurt as a side dish, a spread, a dip, on a sandwich - anywhere. Prepare quickly before guests arrive and fill the house with mouthwatering smells.
ingredients
2 tablespoons olive oil
1 small yellow onion, minced
1 clove garlic, minced
4 plum tomatoes, seeded and chopped
2 15-ounce cans fava beans, rinsed and drained
1/4 cup chopped fresh basil
1 cup Greek yogurt
4 lemon wedges

instructions
1. In large sauté pan, heat the olive oil over medium-high heat. When it's hot and shimmering, stir in the onion and cook until it softens, 4-6 minutes. Stir in the garlic and cook until it becomes fragrant, 30 seconds or so.
2. Stir in the tomatoes and cook until they begin to break down, 5-7 minutes. Add the fava beans and stir to combine everything. Reduce the heat to medium-low and simmer until the beans are tender, 10-12 minutes. Set aside to cool.
3. Meanwhile, in a small serving bowl, stir together the basil leaves and Greek yogurt. When the beans are done, serve them with the basil yogurt and lemon wedges.
