1/4 cup raisins
1/4 cup pine nuts, toasted
2 tablespoons olive oil
1 small shallot, minced
3 cloves garlic, minced
2 pounds baby spinach
1/4 teaspoon red pepper flakes
1 teaspoon fresh lemon juice

instructions
1. Prep all of the ingredients. Soak the raisins in enough hot water to cover for 10 minutes and then drain. In the meantime, toast the pine nuts in a dry skillet over medium heat until they brown in spots, 3-4 minutes.
2. Heat the olive oil in a medium skillet over medium heat. When it's hot and shimmering, add the shallots and garlic and cook, stirring constantly, for 1 minute.
3. Stir in the pine nuts and raisins to warm through, 1-2 minutes, then add the spinach and red pepper flakes and cook, stirring often, until it wilts, about 3-4 minutes. Stir in the lemon juice and serve.
