Sauteed Cabbage With Sherry Vinegar

1 tablespoon olive oil
1 tablespoon unsalted butter
1 small head cabbage (about 2 pounds), thinly sliced
2 teaspoons sherry vinegar

Heat the olive oil and butter in a large saucepan over medium-high heat. When the butter's foam subsides, add the cabbage. Season with a sprinkling of salt and pepper. Cook, stirring occasionally, until it is wilted and soft, 10-15 minutes. Stir in the sherry vinegar and add more salt and pepper to taste.
