White Gazpacho With Mint And Apple

This cooling cucumber soup is flavored with nutty almonds, a tart apple and aromatic mint. It's a perfect light lunch on a hot summer day. The raw garlic will definitely be noticed, so if you'd rather not have a strong garlic flavor, use only one clove.

ingredients

1 cup blanched, unsalted almonds, chopped
2 cloves garlic, peeled
1 1/2 teaspoons kosher salt
1 cup water
3 medium cucumbers, chopped
1 cup Greek yogurt (preferably 2%)
1/4 cup fresh lemon juice
10 mint leaves, sliced
1 tart green apple, cored and chopped

instructions

In a food processor, pulse the almonds, garlic and salt until finely ground. Then add the water, cucumbers, yogurt, lemon juice, mint and apple. Pulse until combined.

These unusual flavors surprised me - delicious - cool but filling. Fast, too.
