Hot And Sour Soup

Hot and Sour soup is a standard in Chinese cuisine in America.  Our recipe includes meat, but it would be equally good without it, so adapt to your own taste. Use just tofu or some extra vegetables for a one-pot meatless meal. 

ingredients

1 teaspoon dark sherry
1 tablespoon sesame oil
3 tablespoons soy sauce
1/2 pound boneless pork loin, cut into very thin strips
6 cups low-sodium chicken broth
2 cloves garlic, minced
1/4 cup minced fresh ginger
8 shiitake mushrooms, thinly sliced
1/2 pound extra-firm tofu, pressed and cubed
1 teaspoon fresh ground white pepper
1/4 cup lime juice
3 tablespoons rice wine vinegar
1 tablespoon cornstarch
2 eggs, lightly beaten
1/4 cup chopped fresh cilantro
2 green onions, thinly sliced

instructions

1. In a large bowl, whisk together the sherry, sesame oil and 1 tablespoon of the soy sauce. Put the pork in the sauce to marinate 10-20 minutes.

2. Meanwhile, bring the broth, garlic and ginger to a boil in a large saucepan over medium-high heat. Add the mushrooms, reduce the heat to a simmer, and cook for 5 minutes.

3. Bring the broth back to a boil and add the pork and marinade. Cook until the meat is no longer pink, 4-5 minutes. (Stir regularly to make sure that the ingredients don't clump together.)

4. Add the tofu, white pepper, lime juice, rice wine vinegar and remaining 2 tablespoons of soy sauce. Reduce the heat to low and allow the soup to simmer for another 5 minutes.

5. In a small bowl, stir together the cornstarch with a little hot water. Add it to the soup, stirring constantly for about 1 minute. While still stirring, drizzle in the beaten egg in a slow stream, so that it forms thin ribbons in the soup. Remove the pot from the heat and stir in the cilantro and green onions.
