Cucumber, Carrot And Radish Salad With Creamy Avocado Dressing

This is a simple to prepare, but complex-tasting salad.  The avocado and crème fraîche go so splendidly together, you'll be pouring this dressing over all your favorite salads.

ingredients

1 pound radishes, thinly sliced
4 medium carrots, thinly sliced
1 large cucumber, seeded and cut into half-rounds
1/2 Hass avocado
1 lime, juiced
1/8 teaspoon cayenne pepper
2 tablespoons crème fraîche
1 tablespoon olive oil
salt and pepper

blender (or food processor)

instructions

1. Fill a bowl with cold water and add the radishes. Rub them clean in a couple of changes of water, then dry them with a kitchen towel. Cut off the stem and root ends, and cut them into 1/4 inch slices.  Slice the carrots and cucumber.

2. Scoop the avocado flesh into the blender, add the lime and cayenne, and purée until smooth. Stir in the crème fraîche and olive oil. Season to taste with salt and pepper.

3. Put the vegetables in a bowl and toss them with an little dressing at a time until they are coated but not drenched in the dressing.
