Avocado Lemon Vinaigrette

The avocado is rich and creamy when blended up for this dressing. Try on a simple greens salad or draped over grilled meats as a sauce.
ingredients
1 avocado
2 tablespoons lemon juice
2 tablespoons heavy cream
1/8 teaspoon cayenne pepper
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper

1. Cut the avocado in half, remove the seed and scoop the flesh from each half into a food processor. Add the rest of the ingredients and pulse until the dressing is smooth.

This is delicious! It's great without cream, too. I toss this dressing with chopped romaine for a quick side. Also a great spread for sandwiches.
