Broiled Salmon With Miso
serves 2
Recipe from cookthink
Be sure to spread just a very thin layer of miso paste across the salmon. Too much will overpower the clean flavor of the fish. What you want instead is a rich, salty crust to the salmon. We prefer a lighter white miso, but a darker paste will work just as well.
ingredients
2 thick salmon fillets
2 teaspoons miso paste
1/4 teaspoon freshly ground black pepper
1 teaspoon canola oil
timer
prep: 10 minutes
total: 20 minutes
tools
baking sheet
spatula
instructions
1. Preheat the broiler to high and place a baking sheet on a rack 6-8 inches from the heat source. Dab the salmon with a paper towel to dry. Season with pepper on both sides. Spread a very thin layer of miso on the tops of the filets.
2. Lightly oil the preheated baking sheet. Place the fish on the baking sheet, miso-side up, and broil until the salmon is slightly translucent in the thickest part, 6-8 minutes.

So simple and so good. The miso creates a salty crust.
