Fresh Tomato Salsa

ingredients
5 ripe plum tomatoes, seeded and diced
1/2 small onion, minced, then rinsed in cold water
2 green onions, white and tender green parts, thinly sliced
1/3 cup chopped fresh cilantro
4 serrano peppers, seeded and minced
1 clove garlic, minced
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1 teaspoon ketchup
1/2 teaspoon cayenne pepper

In a large bowl, stir together all the ingredients, saving 2 tablespoons of cilantro to add just before serving. Cover and let the sauce sit in the refrigerator for at least 30 minutes (overnight if you have time). Before serving, sprinkle with the remaining cilantro and season to taste with more cayenne pepper, salt and pepper.
