Old Bay Barbecued Pork Chops

Using leftover drippings from spicy marmalade-glazed game hens gives these barbecued pork chops a deep flavor, enhanced with Old Bay seasoning and beer.

1 1/2 tablespoons Old Bay seasoning
8 pork chops, each 3/4 inch thick (about 2 to 2 1/2 pounds)
1/2 cup reserved drippings from spicy marmalade-glazed game hens
1/2 cup beer (preferably flat)

instructions
1. Rub the Old Bay seasoning into all sides of the pork chops and set aside for 10 minutes.
2. Brown the chops 4 inches from a high grill or broiler, about 3 minutes per side.
3. Place in a baking dish or casserole, just large enough to hold the chops in a single layer. Mix the drippings with the beer and pour over the chops.
4. Bake in a preheated 375F oven for 25 minutes until tender enough to pierce easily with a fork, turning the pork at least once during baking.
5. Transfer the chops to a platter and serve.
