Sauerkraut With Champagne

This simple dish is inspired by James Beard's classic recipe. The sauerkraut is traditionally cooked with salt pork, but ham makes for a lean substitute. If you don't have Champagne or don't want to sacrifice a whole bottle, substitute dry white wine.
ingredients
1 pound diced ham
2 yellow onions, sliced
6 cloves garlic, coarsely chopped
4 pounds sauerkraut
1 bottle Champagne or white wine
2 bay leaves

medium pot or large Dutch oven
instructions
1. Preheat the oven to 350F.
2. Combine all the ingredients in a medium pot or large Dutch oven, and season generously with freshly ground black pepper.
3. Cover, and place in the oven. Cook, stirring occasionally, 3 hours.
