Chestnut Stuffing
makes 3-4 cups

Fill any poultry or game bird with this classic stuffing before roasting. In general, plan for 3/4 to 1 cup of stuffing per pound of chicken or turkey.

ingredients
3 cups shelled chestnuts
1/4 cup (1/2 stick) butter, melted
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup heavy cream
2 to 3 cups bread crumbs
1/2 cup chicken broth

instructions
1. Place the chestnuts in a saucepan of boiling, salted water and cook until tender.
2. Drain and mash the chestnuts. Stir in the butter, salt, pepper, cream, bread crumbs and chicken stock. Mix until well blended.
