Cucumber And Tomato Salad With Tahini Dressing

You can use this tahini-dressed salad as filling for falafel or serve it on its own. Store extra tahini sauce in the refrigerator.

ingredients
For tahini sauce:
1/4 cup tahini paste
1/4 cup water
2 tablespoons lemon juice, plus extra for the salad
1 tablespoon olive oil
1/4 teaspoon salt
For the salad:
1 medium cucumber, peeled and diced (about 1 1/2 cups total)
3 firm plum tomatoes, seeded and diced (about 1 cup total)
1 handful parsley, roughly chopped
3 tablespoons tahini sauce

instructions
1. For the tahini sauce, whisk tahini and water until smooth. Whisk in remaining ingredients and set aside.
2. In a large bowl, toss cucumbers, tomatoes and parsley. Add tahini sauce and toss to coat lightly.
3. Grind fresh pepper over the top. Season with an extra dash of salt or squeeze of lemon if desired.

Made this for dinner tonight; flavor was ok. Not my favorite, but tasted ok. Might taste better with some lemon pepper seasoning.
