Mango Frozen Yogurt

The beauty of this frozen yogurt is that it tastes as good as ice cream but is healthier and requires virtually no cooking. If you drain the yogurt and chop and freeze the fruit ahead of time, it can be thrown together on a whim.

ingredients

1 to 2 tablespoons drained plain yogurt
1 to 2 handfuls chopped mango, frozen
1 splash white rum or lime juice (or to taste)
1 teaspoon honey (or to taste)
Lime zest, fresh mint, cinnamon or nutmeg (optional)

food processor or blender

instructions

1. Drain the yogurt: In a sieve lined with cheesecloth, drain plain yogurt for a few hours or overnight.

2. Prep the mango: Peel and slice the fruit; place in a freezer bag and freeze for a few hours or overnight.

3. Make the frozen yogurt: Combine drained yogurt, frozen mango and splash of white rum or lime juice in a food processor or blender. Pulse until smooth. Taste for sweetness, adding honey if needed or desired and pulsing again to combine. At this point, you can also add in lime zest, fresh mint, cinnamon or nutmeg to taste. Add a bit of water if the mixture seems too thick. Serve immediately.
