Sweet Sticky Rice With Mango

Sticky rice is easy to make at home. This dessert can be made with light coconut milk, but figure in a few extra minutes for cooking because it will take a bit longer to thicken.

ingredients

2 cups sticky rice (also frequently labeled "glutinous rice" or "sweet rice")
14 ounces coconut milk
1 pinch salt
1/2 cup light brown sugar
2 mangoes, sliced

2 medium bowls
large pot (with lid)
small saucepan

instructions

1. In a medium bowl, cover the rice in warm water. Allow to soak 1 hour. Drain and rinse.

2. Place rice in a large pot with 2 1/2 cups fresh water. Bring to a boil, then cover and reduce heat. Cook for about 20 minutes, or until the rice is tender.

3. Meanwhile, bring the coconut milk, salt and brown sugar to a boil in a small saucepan. Reduce heat and continue to cook until it has reduced slighly and is thicker.

4. Place the warm rice into a bowl and pour the hot coconut milk over it. Stir to combine. Allow to sit 30 minutes before serving. Serve with sliced mango.
