Spicy Onion Rings

The batter for these spicy onion rings crisps up perfectly thanks to the club soda, and if you keep the oil hot, the onion rings will be virtually grease-free.

ingredients
1 cup buttermilk
2 to 2 drops hot sauce
3 eggs
1/2 cup club soda
2 very large onions (over 1 pound each), cut into 3/4-inch rings and separated
3 cups oil
2 cups flour
1 teaspoon paprika

instructions
1. In a large bowl, whisk together the buttermilk, a few drops of hot sauce and the eggs. Stir in the club soda and toss the onion rings in the mixture. Allow to soak 10 minutes.
2. Meanwhile, in a large, deep pot, heat the oil to 350F.
3. Whisk together the flour, paprika and a generous sprinkling of salt and pepper.
4. Drain the onion rings and toss with the flour. Carefully drop about 4 onion rings into the hot oil, cook until golden brown, flipping once. Remove to paper towel-lined plates and repeat for remaining onions. Sprinkle with salt immediately after removing from oil, and serve hot.
