Cream Cheese And Jam-Stuffed French Toast

This decadent stuffed French toast has a ginger-spiced cream cheese and kiwi jam filling, but you can adapt it using other flavors.

ingredients
3 eggs
1 tablespoon sugar
1 teaspoon vanilla
1 teaspoon grated fresh ginger
2 tablespoons milk
4 slices good quality bread
Cream cheese
Kiwi jam (or any jam of your choice)
2 teaspoons butter

instructions
1. In a large bowl, whisk together eggs, sugar, vanilla, ginger and milk. Set aside.
2. Take 2 slices of bread, spread with cream cheese. (If you are using block cream cheese instead of the spreadable kind in a tub, you might need to whip it with a fork first so it spreads easily and does not tear the bread.) Spread the remaining slices with jam. Form cream cheese/jam sandwiches. Set aside.
3. Heat 1 teaspoon of butter in a frying pan. Tilt the pan so that the butter evenly coats the pan.
4. Meanwhile, dip both sides of the sandwich into the egg mixture. Place in frying pan. Cook about 3-5 minutes or until golden brown. Flip and brown the other side.
5. Repeat with the remaining sandwich. Serve immediately.
