Whipped Cream Frosting

makes enough to frost 2 (9-inch) round cake layers

ingredients

1 egg white
3/4 cup sugar
3 tablespoons cold water
1/2 teaspoon vanilla extract

instructions

1. Place the egg white, sugar and water in the top of a double boiler or in a large bowl set over simmering water.

2. With a hand-held mixer, beat on low speed for 7 minutes or until the mixture thickens and appears glossy.

3. Add the vanilla extract and beat to incorporate.
