We love to use pita as pizza crust. When the pocket is opened and split into 2 thin slices, the crust gets really crispy. Keep the toppings to the minimum and bake it in a really hot oven. On this one, we added pitted black olives to the traditional margarita pizza.
If you're making bacon, think twice about tossing the fat. Smoky bacon fat both flavors the lavash and gives it an almost biscuit-y texture -- flaky and reminiscent of old-school Southern food.

The secret to this bread? Knead the dough for 2 minutes, let it rest, then knead again for 3 minutes. Letting the dough rest allows the gluten to relax, making a smoother dough.
