Ham, Pineapple And Mushroom Pizza
makes 2 personal pizzas
This pizza fills out the full spectrum of tastes. There's sweet pineapple, tart tomato sauce, salty ham, a hint of bitter olive oil, meaty mushrooms and ham, and spicy red pepper flakes. We've found that really thin lavash bread works best for homemade pizzas, but pita bread and tortillas work, too.
2 large slices lavash
1/4 cup tomato sauce
1/2 cup grated mozzarella
1/2 cup diced ham
1/2 cup diced pineapple
6 white mushrooms, sliced
red pepper flakes

total: 20 minutes

1. Preheat the oven to 500F and put the rack in the upper-middle position.
2. Put the lavash on a non-rimmed baking sheet or pizza peel. Spread half the tomato sauce evenly over each piece. Spread grated cheese, ham, pineapple and mushrooms over the two pizzas. Sprinkle them with red pepper flakes and drizzle over a little olive oil.
3. Slide the pizzas directly onto the oven rack (you can put a sheet of aluminum foil on the rack below to catch any falling toppings if you need to), and cook until the cheese is bubbling and melted, 5-10 minutes.
