Penne A La Vodka

I worked out this version of this trendy dish using a spicy Hungarian paprika paste. I think it tastes smoother and better.Like this recipe? Find more like it in one of Barbara Kafka's many excellent cookbooks.
1/2 pound penne
2 tablespoons olive oil
1/2 cup finely chopped peeled Italian tomatoes
3 tablespoons vodka
1 teaspoon Red Gold-brand paprika paste
1/2 cup heavy cream
1/2 teaspoon salt

1. Bring a large pot of salted water to a boil. Boil the penne about 12 minutes, until tender but firm. While the pasta is cooking, make the sauce.
2. In a small skillet, heat the oil over medium heat. Add the tomatoes and stir to coat with oil. Take the skillet off the heat and pour in 2 tablespoons of the vodka. Carefully tilt the pan toward the flame to ignite the vodka. if you prefer, you can light it with a long kitchen match. Shake the pan until the flames subside.
3. Return the skillet to medium heat. Stir in the paprika paste. Add the remaining tablespoon vodka, the cream, salt and pepper. Boil until slightly reduced and thickened.
4. Drain the cooked penne thoroughly in a colander. Rinse briefly under warm water. Transfer it to a serving bowl. Pour the sauce over the penne and toss well. Serve at once.
