White Bean, Creme Fraiche And Sage Frittata

This light but still filling frittata goes well with a few strips of crisp bacon. If you go that route, try frying up some more sage leaves in the bacon grease before serving.

1 tablespoon crème fraîche
1 cup white beans, rinsed and drained
1 teaspoon butter
1 teaspoon red pepper flakes
1 teaspoon fresh chopped sage (plus more for garnish)

1. Preheat the broiler. Whisk three eggs together with the crème fraîche. Rinse and drain the beans.
2. Melt the butter in a small nonstick pan. Add the beans, and season with red pepper flakes, sage and pepper. Cook, stirring often for 3-4 minutes.
3. Pour the eggs over the beans, and stir to combine, shaking the pan to evenly distribute the ingredients. Let cook for 2 or so minutes to set, then place the pan under the broiler. When the top is set and browned, about 3 minutes, remove the frittata. Sprinkle with sage before serving.
