Spicy Shrimp Salad Sandwich

Making a shrimp salad sandwich is a great way to use up leftover shrimp. Try it with plain or seasoned shrimp using leftovers from our Broiled Thai Shrimp.
1/4 pound cooked shrimp, peeled and deveined
2 tablespoons mayonnaise
1 tablespoon plain yogurt
1 teaspoon lime juice
2 tablespoons chopped cilantro
1/2 teaspoon minced chipotle peppers
1/4 avocado, thinly sliced
Whole wheat bread

total: 10 minutes

1. Roughly chop the shrimp. In a medium bowl, stir together mayonnaise, yogurt, lime juice, cilantro and chipotle until combined. Add the shrimp and toss until coated.
2. Spoon out the shrimp mixture onto pieces of bread, top with avocado slices and season to taste with salt and pepper.
