Cucumber And Pear Gazpacho With Mint

serves 2-4

Even though cucumbers are (obviously) vegetables, their watery texture make them a perfect pair for similarly juicy fruits like pears, where all the clean flavors can blend together.  Combined with sour greek yogurt, this is a wonderfully cooling soup.



ingredients

1 cup blanched, unsalted almonds, chopped
2 cloves garlic, peeled
1 1/2 teaspoons kosher salt
1 cup water
3 medium cucumbers, chopped
1 cup Greek yogurt (preferably 2%)
1/4 cup fresh lemon juice
10 mint leaves, sliced
1 Bartlett pear, diced

instructions

In a food processor, pulse the almonds, garlic and salt until finely ground. Then add the water, cucumbers, yogurt, lemon juice, mint and all but 2 tablespoons of the pear. Pulse until combined. Top each bowl with diced pear.
