Prosciutto Pita Pizza With Caramelized Onion And Pear

1 tablespoon olive oil (plus more for drizzling)
1/4 teaspoon kosher salt
1/2 teaspoon granulated sugar
1/2 medium onion, thinly sliced
2 pitas (or pieces of lavash)
8-10 slices prosciutto
1 Bartlett pear, thinly sliced
1/4 pound mozzarella, thinly sliced
prep: 40 minutes
total: 50 minutes

1. Combine the olive oil and onions in a medium saucepan, and sprinkle with the salt and sugar. Cover and cook over medium heat, stirring occasionally, until the onions are soft, light brown and caramelized, 30-40 minutes.
2. Preheat the oven to 500F. If the pitas are really thick, cut them in half lengthwise. Drizzle them with olive oil and put them in the oven to crisp slightly, 1-3 minutes.
2. Take the pitas out of the oven and layer them with the prosciutto and pears. Drizzle with a little more olive oil, then top with the onions, mozzarella and fresh ground black pepper.
4. Bake directly on the oven rack until the pizzas are crisp and the cheese is bubbly, 4-6 minutes.
