This Watermelon Salad With Feta and Tomato is a summer abundance treat. I remember summer evenings, enjoying fresh produce from sweltering day’s work in our family’s country garden. As a young child, I enjoyed watching my grandfather plow the earth with his John Deere 60 and discing it to prepare the space for our extra large garden each spring. I loved walking along behind the tractor, feeling the soft dirt on my bare feet. There was none other that compared to the fresh tomatoes and watermelon that we grew.

In this delightful recipe, the salty feta and slightly bitter olive oil make this salad completely satisfying. And add in some sweet heirloom tomatoes along with wonderfully ripe watermelon. And you have a beautiful summer treat!

bowl or platter
sharp knife

Shopping List
watermelon
heirloom tomatoes
feta
basil leaves
olive oil 
cashews
cucumbers
red onion

Watermelon Salad With Feta and Tomato

Instructions:
Slice the watermelon into bite-size cubes. Rinse and cut the tomatoes into wedges. Gently combine in a bowl or arrange on a platter. 

Crumble the feta over the watermelon and tomato mixture, add the torn basil and drizzle with olive oil.  Top with cashews and cucumbers and red onions if desired.

Season to taste with sea salt.
