Cheddar Sandwich With Pickled Cucumbers And Sweet Onions

This simple sandwich has big flavors thanks to hearty pumpernickel, sharp cheddar and the pickled, vinegary bite of cucumbers and sweet onions to cut through all the richness.
2 slices pumpernickel bread, toasted
4 thick slices cheddar cheese
1/4 cup quick pickled cucumbers and sweet onions

1. Toast the bread on both sides until it's crisp on the outside but still soft on the inside.
2. Arrange half the cheddar on one of the pumpernickel slices. Arrange the cucumbers and onions evenly over the cheddar and top with the remaining cheddar and the remaining slice of bread. Cut the sandwich in half diagonally.
