Penne With Tomatoes, Goat Cheese And Thyme

serves 2-4

A simple sauce made from fresh goat cheese, olive oil and chopped fresh tomatoes seasoned with thyme leaves works well with penne or your favorite pasta. The heat of the pasta melts the cheese and forms a creamy sauce.



ingredients

3/4 pound penne
1 pound tomatoes, chopped
4 ounces fresh goat cheese, crumbled
1 teaspoon chopped fresh thyme
3 tablespoons olive oil

instructions

1. Bring a large pot of water and 2 teaspoons salt to a boil. When the water boils, add the penne and cook until it's al dente.

2. Meanwhile, prep the tomatoes, goat cheese and thyme.

3. When the pasta's done, drain it well in a colander and put it in a large bowl. Add the rest of the ingredients to the pasta and toss to combine. Taste the pasta and season with salt and pepper as needed.
