Bacon, Avocado and Tomato Sandwich
serves 2
Why would you mess with a classic BLT by adding some slices of avocado? The real question is, why would you not? The combination of the creamy avocado and the crisp bacon is more than good. It's mouthwatering, delicious, divine.
4 slices thick-cut bacon
4 pieces white bread, toasted
4 tablespoons mayonnaise
1 large heirloom tomato
1/2 avocado, sliced
salt and black pepper
prep: 10 minutes
total: 20 minutes
medium skillet
serrated knife
2. Toast the bread so that it's crisp and brown on the outside, and firm but softer on the inside. Let the slices cool briefly, then spread the mayonnaise evenly on each slice.
3. Cut the tomatoes into 1/4-inch-thick slices. Arrange the slices evenly on two pieces of the bread. Season them with a sprinkling of salt and a generous amount of pepper.
4. Top the tomatoes with the avocado slices, more fresh ground black pepper, the bacon and the other piece of bread. Press each sandwich down gently, and cut it in half diagonally with a serrated knife.
